We’re pulling out all the stops today.
It’s August!? Whaaaaa? When did this happen? I’m sure I’m not alone in thinking that this summer is zipping by. The older I get, the faster it goes, and the more I want it to slowwwww down.
We’ve had a sensational summer filled with so much family and friends. The memories alone will keep me warm in the winter. (I know, I know! Bite my tongue. Sorry. No more mentions of Old Man Winter until it is absolutely necessary.)
So, while it’s still scorchin’ out, how about we highlight one of my favorite sizzling-weather foods.
The first that comes to my mind? Peaches. Yours too?
We’ve enjoyed peaches in this, this and this.
And now peaches paired with burrata, prosciutto, balsamic and honey? Delicious.
This dish represents the sweet smoldering days of August.
This eighth month of the year, which carries with it the pressure of making sure we head into fall on a sweet summer note, needs all the support it can get.
I for one believe it can do it.
And as long as peaches and burrata are in the world – August will always do its job!

Ingredients for this Balsamic Peach, Burrata & Prosciutto Salad:

- Fresh peaches
- Prosciutto
- Balsamic Vinegar
- Arugula
- Burrata
- Olive Oil
- Honey
- Salt & pepper

Cook’s Notes for Balsamic Peach, Burrata & Prosciutto Salad:
- There are so many iterations of this salad on the interwebs, I’ve made mine a little different by adding balsamic vinegar to the peaches before roasting, and a drizzle of honey before serving. Feel free to add a little brown sugar and butter before baking the peaches if balsamic is not your thing.
- Roasting the peaches makes them warm and silky, but slicing them up without roasting is also a nice alternative.
- Burrata comes in different sizes, feel free to add as large or small, as many or as few as you’d like.

The difference between Burrata and Mozzarella:
Burrata and mozzarella are two types of semi-soft Italian cheese, however, burrata is mozzarella that is formed into a pouch and filled with soft curd and cream. Whereas mozzarella is made with cow or water buffalo milk and has an elastic texture.

They say you eat with your eyes first….try not to get too full at first glance! 😉

Balsamic Peach, Burrata & Prosciutto Salad
- Yield: 4 1x

Description
Few things are more satisfying than gathering family and friends around the table. This Balsamic Peach, Burrata & Prosciutto Salad makes a fine addition to any special meal.
Ingredients
1 lb. peaches, each peach cut into 8 wedges
1/3 lb. thinly sliced prosciutto
A good drizzle of balsamic vinegar (about 3 Tbs.)
4 cups loosely packed baby arugula
4 (2 oz.) burrata balls
Olive oil
Healthy drizzle of honey
Kosher salt & cracked black pepper
Instructions
Preheat oven to 350 F.
Put the sliced peaches in a bowl. Add the balsamic vinegar, salt and pepper.
Place in the oven for about 20 minutes, until peaches are tender but still retaining their shape.
Remove from oven.
Prepare 4 dinner plates with arugula and 4 thin slices of prosciutto. Top with peaches and burrata, a drizzle of honey, a crank of salt, and cracked black pepper.
Enjoy!

This is gorgeous. Girlfriends are coming over later this week and this might fit into my menu. I can’t get buratta easily, unfortunately, but whenever we travel I make sure to order it. Once in NYC we had grilled bread served with stracciatella (SP?) which is the INSIDE of buratta! Omg it was heavenly.
