Our wrapping is done, Christmas dinner is planned and our grocery shopping, complete. Now……..we wait.
Hubby and I made a concerted effort this year to be as ahead of the game as possible.
With the girls due to arrive later tonight, we didn’t want anything interfering with their homecoming. It’s been many months since the five of us were together [at home] making it all the more important that the next few days be as relaxed and family-focused as possible. Without the hustle and bustle of last minute shopping, we’ll get to concentrate on more important things like ping-pong, karaoke and cooking together.
Fun by design.
As I pondered my menu for the week, I had the idea to include these Pepperoni & Fire Roasted Pepper Roll-Ups. Mostly because they’re delicious and include some of my favorite snack-y flavors…but also because they’re quick and easy.
In our house, we can’t resist a good crescent roll, so it will come as no surprise to anyone that I figured out a way to incorporate them into a recipe.
I had the idea to wrap some of my favorite savory flavors in this buttery bun and let the party begin.
In keeping with my mood for roasted red peppers lately – and our usual mood for the flavors of pepperoni pizza – the thought of this appetizer came together quickly.
The melted cheese with the zip of the pepperoni and the sweetness of the peppers makes for an ideal flavor combination.
It’s as simple as combining chopped pepperoni with shredded mozzarella and diced red peppers, delivering a heaping tablespoon to the center of the triangle-shaped dough, rolling it up and baking.
Done.
Who can’t use an appetizer, especially at this time of year, that can be ready in minutes but taste like it took longer?

PrintPepperoni & Fire Roasted Pepper Roll-Ups
Ingredients
- 1 1/2 oz. thinly sliced pepperoni, chopped
- 1 1/2 oz. mozzarella, shredded
- 1 1/2 oz. fire-roasted red peppers, diced
- 1 container Pillsbury Crescent Rolls
Instructions
- Preheat oven to 375 degrees.
- In a medium bowl combine first three ingredients.
- Unroll refrigerated dough and separate the triangles.
- On the long end of each triangle, scoop a heaping tablespoon of pepperoni mixture.
- Slowly roll the dough making sure the short end finishes on top.
- Close up the one side with the remaining longer length of dough.
- Bake for 12 minutes until browned.
- Serve warm.
