I am all about comfort foods these days, and Mom’s Old-Fashioned Meatloaf fits the bill!

At first sight of flitty falling leaves, football on the telly, apple cider in the coolers and early holiday sales – something strikes my discerning palate…
The craving for carbs! 🙂
Cozy comfy crave-y carby food. Mashed potatoes, pastas, pies, doughnuts, meatballs, meat loaf… You get the picture. 😉

I made our first meatloaf of the season recently, and while munching down to my hearts content, I asked the fam if I should share it on the blog. Luc was surprised to hear that I hadn’t yet. So here. we. are!
This decision made me happy. Here’s the thing about my meatloaf – it’s probably the simplest recipe you’ll find on the inter-webs for old-fashioned meatloaf and it’s the one I grew up eating – which means – CLASSIC.
Effortless, tried-and-true, this is a winning recipe!
My mama knew what she was doing in the meatloaf department!

And I can’t remember a time we didn’t fight over the crispy edges! Your family too?

- Ground beef
- Eggs
- Breadcrumbs
- Ketchup
- Onion
- Salt & pepper

Serve it up alongside your favorite potato or rice dish, maybe a roasted seasonal veggie – and you have got yourself a cozy meal, my friends.

Mom’s Old-Fashioned Meatloaf

Description
I am all about comfort foods these days, and Mom’s Old-Fashioned Meatloaf fits the bill!
Ingredients
2 lbs. ground beef
2 eggs
1 cup seasoned bread crumbs
1 cup ketchup, plus more for drizzling
2 medium onions (1 diced and the other sliced)
salt & black pepper, to taste
Instructions
Heat the oven to 350 F.
Grease a baking pan. Set aside.
In a large mixing bowl, combine the ground beef with the eggs, bread crumbs, 1 cup of ketchup, diced onion, salt and pepper.
Place the meat mixture in a baking pan and shape it into a loaf.
Drizzle the top with ketchup and salt and pepper.
Place the sliced onion around the perimeter of the meatloaf.
Bake for 1 hour.
Drizzle more ketchup on the top, and bake for another 10 – 15 minutes or until a thermometer registers 160 F.
Serve warm.
Enjoy!
Notes
Meatloaf makes for great leftovers. Slice it up and serve in sandwiches.

I have started using 3/4 seasoned herbed stuffing & 1/4 regular seasoned bread crumbs. In addition to the ketchup on top my mom also put strips of bacon over the ketchup to add flavor. My mom also put same amount of milk as bread crumbs and it always comes out perfect and moist. P.S. I also sauté the chopped onion before I add it. Yum!!!

I love family recipes! Meatloaf was always a family favorite. It was the first meal I cooked for my husband-to-be. I thought maybe my dad was trying to scare him away, but he loved it!

Love a juicy meatloaf! Of course you’d be fighting over the crispy edges. It must have been the reason for the mini loaf pans to be invented. At least I like to think so:)

I haven’t made a meatloaf in years! It was a favourite growing up and a go-to meal to make when I first got married. This has me craving it! Love that you kept it simple. Can’t beat a classic meatloaf. And yes, we totally fought over the crispy edges! So good!
