I love meatballs.
Especially meatballs on potato rolls. Fuggedaboutit!
Let me tell you a little story.
I made a nice pot of sauce and meatballs the other night.
We had left-overs.
Lucky us.
So Cheesy Meatball Sliders it was.
Do you love tiny food on small plates with big flavor?
Especially tiny food on small plates with big flavor that fly little flags?
Don’t worry if you don’t have the flags.
They add to the recipe but they don’t make the recipe.
Flags are optional.
I love left-over nights almost as much as I love meatballs.
Here’s why…
1) Heat left over sauce and meatballs.
2) Open package of potato rolls.
3) Place roll on plate.
4) Set meatball on roll.
5) Spoon sauce over meatball.
6) Shred mozzarella over meatball.
7) Place a beautiful basil leaf on meatball.
8) Close potato roll.
9) Top with tiny flag.
10) Or not.
11) Eat.
12) Enjoy!

Meatballs
Ingredients
2 ½ lbs. ground sirloin, pork, veal (in equal portion)
1 ½ cups grated Romano cheese
¾ cup chopped parsley
5 garlic cloves, minced
1 ¼ cup Italian bread crumbs, seasoned
2 large eggs
1 tsp. salt
½ tsp. black pepper
Directions
1) Combine all of the ingredients in a large mixing bowl.
2) Using your hands, mix the ingredients together.
3) Shape the mixture into 2-inch meatballs, making approximately 40 meatballs.
4) Gently place in sauce and cook for a couple of hours.
