I know I said I’d only be posting once a week, and I posted grilled pizza & 50 more summer cookout recipes just two days ago, but I couldn’t resist sharing this burger, especially since tomorrow is National Hamburger Day! Were you guys aware of that awesome fact? And with Memorial Day on Monday, it would be irresponsible not to share.
This burger is a ‘go big or go home’ kinda situation. I almost called it the Best & Messiest Ever Juicy Burger but I reined it in. Some folks might not love getting their hands mussed and I wouldn’t want to scare them away before they had the chance to try it.
Are you just a little curious about the cutting board? Were you a tiny bit nervous that maybe you forgot something? Sorry! It was not my intention to scare you! It is my intention, however, to share with you an awesome company that does a beautiful job in the personalized gift department. So no worries, we actually have three weeks before Father’s Day but it’s never too early to plan – am I right? And hey – what about this burger for your main man? If he’s a meat eater – I think he’ll love it!!
I start with ground Angus beef, 80/20 (go big or go home…).
Then…
A decent sized slice of a big, bold and beautiful juicy beefsteak tomato (sorta sounds like the name of a soap opera…).
A cold and crunchy sandwich-sized slice of a kosher dill pickle (must be dill – never sweet…).
Buttered and grilled sliced sweet onion.
Crispy leaves of iceberg lettuce.
And my special Burger Sauce. Notice I called it my special Burger Sauce…not Special Sauce…that name’s been taken…perhaps you’ve heard of it…
And soft, I mean downy soft, sesame seed hamburger buns. No compromising on that. Nope. Never. Okay wait – maybe a soft buttery brioche roll, but that’s it. That’s the only substitution I’ll agree to. And I’m really not all that happy about it, but I’ll allow it.
Now for the piece de resistance. We’re making four patties out of two pounds so I’m sure you’ve done the math…1/2 pound burgers (go big or go home…). Then, in the core of this beefy beast, place a pat of butter (go big or go home…). Next, just before hitting the grill, brush the burger with —–> melted butter (go big or go home…). Cook for 3 – 4 minutes on each side making sure to flip only once, and never, I mean ever, push down on the burger with the spatula. Keep those juices inside where they belong.
Remove from grill and proceed to build the Best Ever Juicy Burger you’ve ever had!
One final word: Napkins.

“This is the best ever juicy burger!”
Ingredients
- Burger
- 2 lbs. ground Angus beef (20 percent fat)
- 4 thick slices sweet onion
- 3 Tbsp. butter, melted
- 4 pats of cold butter
- Salt and freshly ground black pepper, to taste
- 4 sesame seed hamburger buns
- Toppings
- Iceberg lettuce
- Sliced ripe tomatoes
- Sliced dill pickles
- Burger Sauce
- 2 Tbsp. good Mayonnaise
- 2 Tbsp. Mustard
- 2 Tbsp. Ketchup
Instructions
- Divide beef into 4 equal portions.
- Form each portion into a round patty, 4 inches across, all with equal thickness.
- Cut a slit into the side of each burger and tuck a pat of butter into the opening. Pinch the slit closed so the meat completely covers the butter.
- Set up the grill for direct cooking and preheat to high.
- When ready to cook, brush and oil the grill grate.
- Brush each side of the sweet onions with melted butter and salt and pepper.
- Place them on the grill and cook until nicely browned on both sides, about 4 minutes per side.
- Carefully remove onions from the grill and set aside.
- Brush one side of the burgers with melted butter and salt and pepper.
- Arrange the burgers, butter side down, on the hot grate and grill until the bottoms are nicely browned, about 5 minutes.
- Brush the top side with melted butter and season with salt and pepper.
- Using a spatula, turn the burgers and grill until they are browned and cooked to taste, about another 5 minutes.
- Meanwhile, brush the cut side of the buns with the remaining melted butter and toast them cut side down on the grill during the last 2 minutes the burgers cook.
- In a small bowl, combine mayonnaise, mustard and ketchup. Stir until a pretty peach color emerges. (You can adjust measures to meet your own taste.)
- Put the burgers and onion slices on buns.
- Serve with Burger Sauce and desired toppings.
