I don’t want to be one of those people who dwells on the weather; and I certainly don’t want to dwell on the negative, but COME ON ALREADY! It’s still so coldddd!
I needed a doughnut. I needed a doughnut, a cup of tea, and a very long book. {C.S. Lewis knew the deal!}
Do you guys have days like this, too?
My antidote? Doughnut pans. There’s something about knowing that I have two doughnut pans sitting cozily in my cupboard just waiting for an occasion such as this.
And there’s no thinking twice about it…
Becauuuuuuuse – these doughnuts are baked! Yep – a doughnut we can feel good about.
Not sure you want powdered? Maybe you’re in the mood for Strawberry with Fresh Strawberry Glaze…. or Nutella with Toasted Coconut…
It’s nice to treat ourselves every once in a while. And it’s nice to have choices. 🙂
Man, I am ready for springtime weather. Ready for garden gloves, pruning shears, and muddy boots. Ready to throw open the windows and let the house breathe. You too? But until then (and I have to believe we’re getting close), I’ll continue to enjoy my long books, cups of tea and Baked Powdered Doughnuts.
I’ll suffer through! 😉

Description
Your Monday deserves a Baked Powdered Doughnut that is this good!
Ingredients
- Baking spray with flour
- 2 cups all-purpose flour
- 1½ cups sugar
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- ½ tsp. kosher salt
- 1 extra-large egg, lightly beaten
- 1¼ cups whole milk
- 2 Tbsp. unsalted butter, melted
- 2 tsp. pure vanilla extract
- Seeds from 1 vanilla bean
- 6 Tbsp. unsalted butter, melted
- 2 – 3 cups powdered sugar
Instructions
- Preheat the oven to 350 degrees. Spray 2 doughnut pans well.
- Into a large bowl, sift together the flour, sugar, baking powder, cinnamon and salt.
- In a small bowl, whisk together the egg, milk, melted butter, vanilla extract and vanilla bean seeds.
- Stir the wet mixture into the dry ingredients until just combined.
- Spoon the batter into the baking pans, filling each one to just full.
- Bake for 15 – 17 minutes, until a toothpick comes out clean.
- Allow to cool for 5 minutes, then tap the doughnuts out onto a cooling rack.
- For the topping, place the melted butter in a medium sized bowl, and 2 – 3 cups powdered sugar in a gallon sized zip lock bag.
- Dip each doughnut first in the butter, then one at a time, place them in the zip lock bag. Give a gentle but thorough shake, until the doughnut is completely powdered.
- Enjoy!

I need a doughnut too, or maybe two. After all, they’re baked 😉 ! I was just getting lovely spring weather in Rome when I was transported back to snow and boots, and hat and cold!! How can a girl survive the shock? Well, eating your amazing doughnuts sure helps. I love powdered sugar. It is the Italian icing and frosting. All our desserts have that white dreamy stuff on top.
