Bacon & Cheddar Popcorn

In a text to the kids, I wrote, “Okay! Dad and I are disagreeing and we need your help!”

Chels quickly responds, “What’s up??”

Then Nick, “What?!”

“Dad and I created a fun snack which includes: popcorn, bacon, shredded cheddar and onion salt. Dad wants to call it, Bacon Cheddar Popcorn, and I want to call it, Loaded Baked Potato Popcorn with Bacon & Cheddar. Any thoughts? On either? Or something else altogether? We’re desperate for your answer!” 🙂 🙂 🙂

Nick replies, “Tell Pops I said sorry, but I like yours better sweeta!”

To which I respond, “”YES!!!! Thanks, pal!”

Nick texts, “Anytime sweeta!”

And just as I was about to do my running-man-victory-dance (even though I hadn’t received a response from the girls yet, I was completely confident that they too were going to like my idea) my phone chimes…

“Sorry to say it, but Lauren and I like Dads… 🙂 It’s just more to the point.”

Nick texts, “That’s not cool!”

From Chels, “Bacon & Cheddar Popcorn”

To which I respond, “That’s NOT cool!”

Chels says, “Sorry mama!! kissy face kissy face emoticons.

To which I say, “I’m not telling Dad!” hahahahaha

And well… you know the rest… [See title.] That darn majority rules…

I had some bacon in the fridge and had the idea to do something fun with it. And since Hubby’s always up for a good challenge…we put our heads together and came up with this scrumptious snack (that just might be suffering from an identity crisis but we won’t go there…).

It was as good a night as any to pop some corn and have some fun as we were about to embark on the finishing touches of our decorating. It was twinkle light time.

Ever since watching Nigella’s holiday special a number of years ago…I love twinkle lights in the kitchen. I actually love twinkle lights everywhere!

So…where 364 days a year we are more than satisfied with Skinny Pop, we feel completely comfortable indulging in this very decadent, highly caloric, but gluten-free, popcorn treat, 1 day a year. (Well, this is our first year, but I’m certain we’ll have it again, next year. 😉 )

Who would ever guess that bacon, shredded cheddar and onion salt could make a most perfect complement to crunchy corn?

Ingredients

Scale
  • 1/2 lb. bacon, crispy and cut into bits
  • 1 Tbsp. rendered bacon fat
  • 4 Tbsp. olive oil
  • 1 cup popcorn kernels
  • pinch of salt
  • 3/4 cup shredded cheddar
  • 1 tsp. onion salt

Instructions

  1. Fry bacon until extra crispy. Remove from heat and let cool.
  2. Reserve 1 Tbsp. bacon fat.
  3. In a large, heavy-bottomed pot, add bacon fat, olive oil, popcorn kernels and salt.
  4. Place top on the pot and cook kernels until popped. Shake pot as it cooks.
  5. When the popping subsides, remove from heat, and pour corn into a large bowl.
  6. Add the cut bacon, shredded cheddar and onion salt to the corn and mix well.
  7. Eat immediately.

    Next time my boys want me to watch Home Alone with them, I need this popcorn! What a delicious flavor combo — and I’d take this savory version over sweet any day!

    I like your more descriptive name, but I think you went with the right title – when it comes to bacon I think it needs to be the first word you see in the title! Bacon and popcorn sounds like an addicting combo, and of course cheddar cheese takes it right over the top! 🙂

    This looks amazing! Putting bacon in popcorn is such a new and great idea! I’m watching Hunger Games in a week or two, and will be sneaking some of this yummy bacon popcorn into the theater if I can manage it 😉

    I’m having one of those….hmmmm, “why didn’t I think of this” moments. I love popcorn. Bacon. And chedder. And onion flavor of course. Why not put them all together, watch home alone and call it dinner? I mean, who has a problem with that? We can eat a salad or something too to make ourselves feel better. Seriously, this is great. Simple. My husband is going to love this. We are big bacon people!
