Sheet Pan Chicken Thighs with Summer Vegetables is an easy and delicious meal that cooks up in one pan in no time!
Let’s face it – sometimes it rains.
Sometimes it rains, but we still have to eat.
We still have to eat, and we want a meal that is satisfying and summery.
A meal that is satisfying and summery and one that will rescue us.
Rescue us from having to balance an umbrella in one hand and a meat thermometer in the other while rain splashes our calves and makes our bbq’d chicken soggy.
Enter Sheet Pan Chicken Thighs with Summer Vegetables.
Guys. This is the most juicy-&-flavorful-straight-from-the-oven chicken dish you will ever have.
If you have a recipe for chicken thighs that is juicier than this – I will eat my oven mitt. I will. I’ll risk it.
This chicken is that juicy.
And these summer veggies? Every last one of them? All dressed up in the same homemade balsamic marinade that the chicken gets bathed in… Doesn’t get any better than that!
MARINADE INGREDIENTS:
- Fruity olive oil
- Balsamic vinegar
- Fresh garlic
- Dried herbs
- Salt and pepper
REMAINING INGREDIENTS:
- chicken thighs
- grape tomatoes
- asparagus spears, cut in half
- green beans
- sliced zucchini
HOW TO PREPARE:
- To prepare the marinade, combine olive oil, balsamic vinegar, minced garlic, dried herbs, salt and pepper in a large measuring cup, or mixing bowl, and whisk well.
- Place the chicken thighs in a gallon size ziplock resealable bag.
- Pour half of the marinade over the chicken and seal the bag. Smoosh it and turn it so that the chicken is completely covered in marinade. Place bag in the refrigerator to marinate for at least 4 hours and up to 24 hours.
- Do the same in a separate ziplock with the veggies. (Be extra careful with the smooshing because of the tomatoes.)
- When ready to cook, preheat oven to 425. Cook until the internal temperature of the chicken is 165 F. (Approximately 30 minutes.)
- If you like your skin golden and crispy (and who doesn’t?), a couple minutes under the broiler will do the trick.
I realize that I’ve billed this as a rainy day dish, but it’s a satisfying dish for any day… Any day that you’re craving delicious seasonal eats! Oh, and it makes for superb leftovers too!

Does it have to have the skin on? If I do boneless skinless would I alter the temp or cooking time?

It does not have to have the skin… It may be about 5 minutes less for the boneless, but the best way to know when chicken is done is to check the internal temperature with a meat thermometer, making sure it registers 165F degrees. Thanks for your question.
