Sautéed Scallops with Linguine and Arrabbiata Sauce

Ingredients
  • 1 lb. linguine
  • 1 jar Rao's Arrabbiata Sauce
  • 1 lb. scallops
  • 2 Tbsp. Rao's Extra Virgin Olive Oil, divided
  • 1 Tbsp. butter
  • Salt and freshly ground black pepper
Instructions
  1. Prepare linguine in salted boiling water according to package directions, until al dente.
  2. In a medium saucepan, heat arrabbiata sauce over medium heat.
  3. Prepare scallops by blotting with a paper towel and seasoning both sides with salt and pepper.
  4. Next, add 1 Tbsp. olive oil to a sauté pan and fry half the scallops gently over medium high heat for 2-3 minutes. Be sure to not flip until the scallop releases easily from the pan. Add a pat of butter, flip and cook the other side until golden. Do this for the remaining scallops.
  5. Drain pasta and add to the arrabbiata sauce. Stir until fully combined.
  6. Top with sautéed scallops.
  7. Enjoy!
