Well, things are about to get interesting! This dish is warm and rustic…nothing fancy – just good old-fashioned potatoes dressed up in herbs, olive oil, and ……… cheese.
This is a nice potato.
If you’re a fan of crispy roasted potatoes and Parmigiano-Reggiano – then you have come to the right place!
This side-dish alongside a nice steak or your favorite seafood and a cold crispy salad… these are some good eats!
Do you see the crispy chips of Parmigiano-Reggiano in there? Yep – crispy Parmigiano chips clinging to rosemary scented caramelized potatoes as if their life depended on it. The texture is pure magic. And the aroma – fuggedaboudit!
These have everything I look for in a fabulous potato dish! They’re:

- melty
- cheesy
- herby
I mean really! Does it get any better?

Description
Crispy Mini Potatoes with Parmigiano-Reggiano & Rosemary are fantastically crispy and so irresistible – I dare you not to make them every week!
Ingredients
- 2 pounds mini potatoes, unpeeled and halved (I used assorted red and white potatoes)
- 1/3 cup olive oil
- 3 tsp. chopped fresh rosemary
- 1 cup freshly grated Parmigiano-Reggiano
- Cracked black pepper
Instructions
- Preheat oven to 425 F.
- Place potatoes on a rimmed baking sheet.
- Drizzle with olive oil and sprinkle with rosemary. Toss well.
- Roast potatoes for 30 minutes.
- Remove from oven and using a spatula, toss the potatoes.
- Sprinkle with Parmigiano-Reggiano and toss to coat.
- Return the pan to the oven and roast for another 15 minutes, tossing again halfway through.
- Serve warm with a good crank of black pepper.
- Enjoy!
