Asparagus, Petite Peas & Prosciutto Salad.
Short and sweet.
Is what this post will be.
Like the woman who needs no more introduction than the one name she goes by, “Winfrey”, said Tina Fey and Amy Poehler when introducing, Oprah, at the Golden Globes, last night…
This salad need only go by one thing.
Its appearance…
If that sounds shallow…
I certainly don’t mean for it to.
But it’s all right there.
Appetizing, sumptuous, savory and lush…
Like Winfrey, this salad needs very little introduction.
Thanks for humoring me this morning…

PrintAsparagus, Petite Peas & Prosciutto Salad
Ingredients
Scale
- 1 lb. fresh shelled or small bag of frozen petite peas, thawed
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. minced shallots
- 1 Tbsp. Dijon mustard
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- kosher salt and freshly ground pepper, to taste
- 10 oz. fresh asparagus, trimmed and sliced diagonally into 1” pieces
- 6 cups spring greens
- 6 slices fried prosciutto, cut into strips
- 1/2 cup Parmigiano-Reggiano, shaved
Instructions
- Cook peas in boiling water for 4 minutes.
- Drain and cool.
- Whisk lemon juice, shallots, mustard and balsamic together.
- Slowly whisk in olive oil.
- Add salt & pepper.
- Toss greens with asparagus, prosciutto and peas.
- Drizzle with dressing.
- Top with Parmigiano shavings.
- Serve.

Anyhow, this recipe Annie looks like something I’d order from a fancy restaurant but of course I get to make yours at home and um, not pay the big fancy price! Petite peas are the best aren’t they!! What a wonderful, filling winter salad.
