There’s something so sublime about dutch ovens, red apples, pears and maple syrup that when combined, eliminate the need for falling leaves, shorter days, or migrating birds to remind us that fall is just around the corner. Am I right?
Not that I’m looking for time to move any faster, but I do love autumn, and I see that it’s just starting to scratch at the back door of summer like Champy does when she’s ready to come in.
As promised, I get to bask in the memories of our time at the Saratoga Olive Oil Co. and share with you the awesomeness of this establishment because today I’m using their Red Apple Balsamic and adapting another one of their beautiful recipes. They do a great job of providing education and ideas for how to combine and use their products in creative ways. For example – as you make your way down the wall of olive oils you’ll come to an area that has a large space of cubbies containing recipe cards, much in the way a kindergarten classroom has cubbies, making it easy for the chiclets to grab their mail and go, Saratoga Olive Oil Co. makes it simple to incorporate their sweet and savory oils, vinegars and salts in wonderful recipes designed to showcase their flavors. All that was missing was the beanbag chair and circle time.
This Pork Pot Roast with Pears unites some of the best flavors of fall to create a marinade perfectly balanced with just enough sweet from the fruit, cider and syrup and tart from the red apple balsamic vinegar.
There’s nothing better than one pot meals on a chilly day except for maybe the warm comments generated as a result of the mellow aromas dancing around the house. What would we do without our sense of smell? The dish is simple, just be aware of the internal temperature of the pork. Don’t let it get any higher than 145 degrees F. You want to keep it as tender as possible…gone are the days of 160 degree pork that’s lost all its flavor and charm. Thank goodness.
We enjoyed the pork pot roast with pears with a baked sweet potato dotted with butter.

Pork Pot Roast with Pears will have you wishing for autumn all year through.
Ingredients
- 3 Tbsp. olive oil
- 3 lbs. boneless pork roast
- 1 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- 1/3 cup chopped shallots
- 4 large pears, cored and sliced
- 2 bay leaves
- 3/4 cup apple cider
- 1/2 cup red apple balsamic vinegar
- 4 Tbsp. maple syrup
Instructions
- Preheat oven to 400 degrees.
- Using the dutch oven heat the oil.
- Salt and pepper the pork and brown all sides in the dutch oven.
- Add shallots and cook for 3 minutes.
- Add pears, bay leaves, cider, red apple balsamic and maple syrup to the pot.
- Roast for about one hour. (Internal temp. should be 145 F.)
- Remove from oven.
- Let rest for 5 – 10 minutes.
- Remove bay leaves. Salt and pepper to taste.
- Serve.
