Are you one of those people who always has a stick of pepperoni in your fridge?
If so…you’re in luck! If not, go buy one; you’ll be glad you did! Oh, and while you’re there – throw a block of Muenster cheese in the cart, too!
I had the idea to make this Pepperoni Pie when Luc and I were chatting, recently. We were pondering ideas for new activities she could develop in her life and we came up with the idea for a Friday Night Supper Club. Doesn’t that sound cool? Anyway, we were brainstorming recipe ideas, and the thought for a crustless quiche came to my mind. Then, I went a little wild. I was clearly craving the spicy flavor of pepperoni… and because no quiche is complete without a little cheese…we decided to go with Muenster. We knew it would be a perfect complement to this wonderfully mellow, eggy mixture. Plus – it’s one of Lauren’s favorites.
I love the idea of sending my girls ‘One Pot…One Bowl…One Blender…One Casserole…you get the picture…recipes’. This simple, cheesy, decadent and delicious dish will be a favorite for sure. When I tell you, you probably have all (or most) of what you need at your fingertips, I mean it.
Begin by dicing up your pepperoni and cubing your Muenster cheese.
Gather your flour, eggs, milk, dried basil and garlic powder.
Place everything in a bowl.
Stir with a slotted spoon until everything is mixed.
Then pour the batter into a 9-inch greased pie plate.
Bake in a preheated 400-degree oven for 28 – 32 minutes or until the center is firm (test with a tooth pick).
Cut your palate-pleasing Pepperoni Pie into 6 – 8 wedges. Serve with a crunchy little Frisée Salad and a nice glass of Cabernet Sauvignon.
Supper Club’s never been so easy…
Buon Appetito!
