That is what I love about Italian cooking.
So much of authentic Italian fare is farm to table… sea to table…
Flavors are enhanced mostly through the cooking process, through the addition of fresh herbs, natural spices and robust vegetables, like onion and garlic.
Dom and I were heading home from Lake Placid, Sunday evening, and it dawned on me that I was getting a little hungry. I love to talk about food when I’m hungry. Of course, everything sounds good, but if I am patient enough, and get through the initial pangs, and stop imagining a bowl full of chips or my new favorite cheese, Picobello, swaddled in a small crust of bread, I’ll actually think about a meal that is hearty, filling, and delicious.
Which is where Penne with Sausage & Broccoli was born.
I craved spice. I wanted texture. It needed to be savory. And it had to be a pasta dish.
This dish is all about cooking the pasta to a perfect al dente; the sausage to a perfect crisp; the garlic to a caramelly, sweet softness (garlic tip: keep a very close watch – it can go from perfect to burnt in the same amount of time it takes our puppy to get from her pillow to the fridge when she hears the crinkle of an American cheese wrapper – no time, at all…), and the broccoli steamed to a perfect crunch.
Such a perfect combination. Rustic, meaty, bright and cheesy.
Guess what friends? There is delectable food after chips…

Description
Penne with Sausage & Broccoli his the spot every time!
Ingredients
- 1 lb. Penne
- 3 Tbsp. olive oil
- 3 cloves garlic, thinly sliced
- 1 lb. hot Italian sausage, removed from casing
- 1/2 tsp. red pepper flakes
- 1 lb. broccoli
- Salt
- 1/4 cup grated Parmigianno
- Drizzle of olive oil
Instructions
- Prepare Penne according to directions. (9-10 minutes for al dente.)
- Heat olive oil and red pepper flakes.
- Add garlic and fry until just browned.
- Remove garlic from the pan and add the sausage.
- Cook sausage thoroughly, until browned and crispy.
- Steam broccoli until bright and al dente.
- Mix pasta, garlic oil, sausage and broccoli in a large bowl.
- Add salt to taste.
- Finish with 1/4 cup Parmigianno and a final drizzle of olive oil.
- Serve.
