Apple Cinnamon Yogurt Cake is a sublime treat! Perfect with your first cup of coffee or espresso!
I made this Apple Cinnamon Yogurt Cake for a long weekend in Lake Placid. I’ve discovered that the more we visit Placid, the more I enjoy having homemade meals at the ready.
This cake makes for an ideal breakfast and brunch.
As Dom remarked – because it’s super moist (from the yogurt) and apple-y (from the apple 😉 ), yet not overly sweet, it’s a nice way to start the day.
We’re never opposed to lingering over a pot of coffee, or an espresso or two, with a plate of satisfying nibbles before heading out in the morning, and this cake ticks all the right boxes.
INGREDIENTS FOR APPLE CINNAMON YOGURT CAKE:
- Flour
- Cinnamon
- Salt
- Sugar
- Butter
- Eggs
- Greek yogurt
- Apples
- Lemon zest
Another thing I like about this cake: it travels well.
It’s compact, easily stored, sturdy, tender, flavorful, and perfect with a cup of coffee.
You can pre-slice and munch while you’re on the road, or wait until morning and have a homemade breakfast-treat waiting for you.
Plus – this little baby makes for a stunning dessert.
With its crackly-crunch of a top layer, you might be tricked into thinking that you’re biting into a candy apple.
But then you’ll remember that you’re not…
That it’s cake.
It could happen… 😉
Either way – it’s a real treat! One that you deserve!

Description
Apple Cinnamon Yogurt Cake is a sublime treat! Perfect with your first cup of coffee or tea!
Ingredients
- 1 1/3 cups flour
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1/2 plus 1/3 cup sugar
- 7 oz. melted butter
- 2 eggs
- 1/2 cup Greek yogurt
- 3 apples, peeled, cored and thinly sliced
- zest of 1 lemon
Instructions
- Preheat oven to 350 degrees.
- Butter a 9″ baking pan.
- In a medium sized bowl, mix together the flour, cinnamon and salt.
- In a separate larger bowl, beat the 1/2 cup of sugar and melted butter with a hand mixer until light and airy, about 8 minutes.
- Add the eggs, one at a time, beating for a few minutes after each addition.
- Reduce the speed of your hand mixer and add a third of the flour mixture, mix in, then add 1/2 the yogurt.
- Repeat until all ingredients have been mixed together.
- Next, stir in the apple slices and lemon zest.
- Pour the batter into the buttered baking pan.
- Smooth with a spatula.
- Sprinkle the remaining 1/3 cup sugar on top.
- Bake for 40 – 45 minutes, or until the top is golden and a toothpick comes out clean.
